Fieno (Hay), created by Cesare Augusto Stefani in 1886 for Santa Maria Novella, is a fragrance that encapsulates the essence of an Italian countryside. The composition opens with bright citruses and bergamot, which soon give way to the heart notes of lavender, rose, jasmine, and hawthorn. These florals are intertwined with the warm, earthy aroma of hay, coumarin, and myrtle, creating a rich blend that is both fresh and spicy. The base notes of benzoin, vanilla, vetiver, and sandalwood provide a comforting warmth, grounding the scent in a nostalgic embrace.

Cesare Augusto Stefani, a layman and nephew of the last Dominican friar to direct the Officina di Santa Maria Novella, formally registered the centuries-old Florentine pharmacy as a secular private enterprise in 1871 after Italy's post-unification suppression of religious orders. As modern medicine eroded demand for traditional herbal remedies, he steered the Officina toward cosmetics and fine fragrance, introducing the name Officina Profumo-Farmaceutica di Santa Maria Novella that remains its legal identity today.
